Tuna is a budget friendly option. Most places I’ve gone, Tuna costs between $0.60 and $1 a can. It’s also portable and has a long shelf life. That makes it easy to stock up on and always have at hand.
Although Tuna is easy, it can get boring. Really, how much tuna salad can one person eat before they get tired of it? Yes, you can add tuna to a casserole or another dish, but it’s summer and not the time when most people want to turn their oven on for long periods of time.
Why not make tuna burgers? They are the perfect alternative to a boring tuna salad. Not to mention, they’re versatile. You can bake them in the oven, fry them on the stove or grill them with the use of a little aluminium foil.
My previous recipe for Tuna Burgers used a little oatmeal or leftover breadcrumbs for a binder. It was healthy, but not exactly low carb friendly. The only binder I use in this recipe are a couple eggs. When you form the patties, they’re wet, but the cook up well and make moist burgers.
Ingredients:
- 2 cans tuna in water
- 2 eggs
- 2 strips cooked bacon
- 1 stalk celery
- 1 small onion
- 3 tbsp mixed herbs seasoning
- 1 tbsp dill (I used dry)
- 5 grape tomatoes or 1 Roma
- 1/2 c mayonnaise
Directions:
- Turn the oven on to 400’F/ 200’C
- Drain the tuna.
- Place all ingredients in a food processor and pulse until smooth.
- Form burgers and place them on a baking sheet lined with parchment paper.
- Place in a hot oven and bake for 10 minutes.
- Remove and flip the burgers over. Top with cheese if desired. Bake for another 7-10 minutes.
- Remove from the oven and allow to cool before eating.
